Gluten (Gliadin)

glutenGluten is a protein composite found in foods processed from wheat, barley, and rye flours.  It can cause an immune response that damages the small intestine in individuals who suffer from celiac disease, and it can trigger allergies such as exercise-induced anaphylaxis and Baker’s asthma.  To treat these disorders, people must adopt a lifelong gluten-free diet.  Unfortunately, as with some other food residues, foods labeled gluten-free may be contaminated during processing.  To counter this, we offer reliable gluten residue testing to ensure gluten-free foods are safe for those who have gluten sensitivity.
