Undeclared allergens constitute a large portion of food recalls, and there is a tendency to underestimate the impact of allergens in foods on a susceptible population. The field of allergen testing is rather new and evolving, so crucial issues, such as threshold levels for each allergen, have either not been established or the consensus is still developing.

Allergen confirmation tests

Since the majority of allergen tests are based on antigen-antibody interactions, and by their nature, any antibody would have a level of cross-reactivity with non-target antigens with similar epitopes, we believe when important samples test positive for allergen residue, it is prudent to subject them to confirmation tests to avoid making consequential decisions based on false positives.
